Here’s one great way to make use of apples that nobody wants to eat because they are not sweet enough. I got the recipe off Costco’s The Costco Connection and made some changes to it to suit my taste. The original recipe has a caramel glaze which goes with the cake so check out the original recipe if you’re interested in the glaze. It was definitely worth my time and 6 un-sweet apples disappeared in 2 days after waiting for some attention for more than 2 weeks. MMMmmm..look at those apple chunks and nut slices. Drooool…

Apple Cake
Ingredients:
1 cup packed light brown sugar
1 cup granulated sugar
1 1/2 cup vegetable oil
3 eggs
3 cups all purpose flour
1 tsp baking soda
1 tsp cinnamon
1/2 tsp salt
6 red apples - cored and peeled and cut into 1 inch cubes
1/4 cup crushed walnuts
1 cup sliced almonds
2 1/4 tsp vanilla extract
1 banana (optional) - cut into 1/2 inch thick rings
Method:
- Preheat oven to 325F. Butter and flour a 9 inch baking pan.
- Mix flour, baking soda, cinnamon and salt.
- Beat the sugar and oil in a bowl till well blended.
- Add the egg one at a time into the sugar mixture. Beat well after each addition then add the vanilla and continue beating.
- Add the flour mixture into the sugar mixture, mixing until just blended.
- Stir in the apples and nuts. The mixture will be rather thick.
- Use a spatula to pour the mixture into the pan and scrape the sides. Press the banana slices slightly into the top of the cake.
- Bake for about 50 - 70 minutes or until a skewer inserted in the center comes out clean. It took me about 90mins.
- Serve warm with vanilla ice cream or on its own.
