Dry Curried Potatoes

My mom is probably the fastest cook ever! When I was still in school, I remember my mom whizzing around the kitchen getting the food ready before she got herself ready to get to work. She was truly a superwoman. Let me say that again - she was truly a SUPERWOMAN! She could multitask without tentacles. It was amazing just watching her. This is one of her quick and easy recipes which I used to love as a kid. It’s fragrant aroma would permeate the house making me head straight to the kitchen for lunch -still garbed in my school uniform.

Ingredients:
2 potatoes - cut each into 12 cubes
1 tomato - quartered and cut into 3 parts each
2 cloves garlic
1/2 onion - sliced
1 sprig curry leaves
2 dried chillies - cut into thirds (optional)
2 tbsp dried white bait - washed and drained
1/2 tsp cumin
1/2 tsp chili powder
1/4 tsp tumeric
salt to taste
1/2 cup water
2 tbsp oil

Method:

  1. In a pot, heat oil and add the onion, garlic, chili and curry leaves. Fry till fragrant.
  2. Add the white bait and dry for a while.
  3. Add the potatoes and stir fry for a few minutes.
  4. Remove the garlic and throw it away.
  5. Add the spices and salt. Stir to mix well.
  6. Add the water, cover the pot and let it simmer on low heat.
  7. Test the potatoes to know if they are cooked by piercing it with a fork. It should be able to pierce easily. If the potatoes are not cooked yet but the water is almost dry, add a little more water.
  8. When the potatoes are cooked, add the tomatoes. Leave to cook for a minute of two.
  9. Turn off the heat.
  10. Serve hot with rice.
