Fried Rice with Garlic Minced Meat

It’s been a gloomy day with lots of rain and the sun peaking out only once for 10 minutes before going back to its hiding spot behind the thick clouds enveloping this place. *sigh* Can’t wait for Spring but the weather forecast says that Spring will be delayed by 5 weeks. 5 WEEEEKSSSSSS!!!! It’s planet calling to human. How ironic that this piece of news comes after Earth Hour. I think it has to be more than an hour. Is it too little too late? Oh well…Anyway, with this gloomy mood, I decided to just make do with whatever I had and fry some rice since I did have quite a lot of leftover rice from yesterday. Here’s a healthy one dish meal. Enjoy!

Ingredients:
4 cups cooked rice (preferably left overnight)
1/2 onion - chopped
5 cloves garlic - minced
1 1/2 in garlic - sliced thinly
1 1/2 cup minced meat - washed and drained
1/2 red bell pepper - sliced or cubed
1/2 yellow bell pepper
1 carrot - grated and drained
3 sprigs spring onion - sliced 1 inch long
1 red chili - chopped (optional)
2 tbsp light soy sauce (or more if nec)
1 tbsp sesame oil
1 tbsp vegetable oil
pepper
salt
Method:
- Heat a pan, add oil and fry ginger and garlic till fragrant.
- Add half of the onions, meat, pepper to taste and salt. Fry till the meat browns.
- Add both bell peppers, the rest of the onions and a pinch of salt. Fry till bell peppers are crispy.
- Add rice and mix well.
- Add soy sauce, salt, sesame oil and chili. Stir well and continue frying for a few minutes untl the rise is hot.
- Add the carrots and spring onions. Fry for one more minute.
- Serve hot with sprinkled fried shallots and a sunny-side up egg.
Tips:
-
Squeeze the grated carrot slightly to remove excess liquid so that he rice will not be soggy.

Instead of bell peppers, substitute with peas/beans.

When serving, remove the ginger slices.

To spice the dish, add more chili or pepper.
