Fried Sausage Rolls

This week has been a challenge. Both my kids were unwell and that makes me a sleep-deprived mother. Aside from the porridge and quaker oats that I’ve been feeding the kids, my hubby and I need to fill our tummies. Lucky for me, hubby is not a fussy eater. For the next few recipes, I believe they will be the kind you can prepare with half-closed eyes and no need to measure the ingredients. What you must have is that last ounce of energy to help you stay awake long enough so that you can make sure nothing gets burnt on the stove! First up…fried sausage rolls or ‘roti hotdog’! You can’t go wrong with this one. When I’m in this state, it’s lunch, otherwise, it makes an easy snack when you’re on the go and my son loves this in his lunch box!

Ingredients: (makes 6)
Sausages - beef or chicken
2 eggs - lightly beaten
Bread - preferably white
pinch of salt
oil for shallow frying
Method:
- In a saucepan, boil enough water to cook the sausages.
- When boiling, drop the sausages into the water. When they float, remove and drain on kitchen paper.
- On a dry plate, place one slice of bread on it. With fingertips, press the bread firmly so that the bread becomes flattened.
- Heat the oil in a shallow frying pan.
- Place a sausage at the edge of the bread. Roll the bread with the sausage tucked in.
- Holding the roll firmly, roll it in the beaten egg.
- When the oil is hot, place the portion of the roll where the bread edge overlaps down on the pan. This will seal the bread and prevent the bread from opening up.
- When the sides turn golden, turn over the bread and fry all sides until evenly golden.
- Remove from oil and drain on kitchen paper.
- Serve hot with tomato or chili sauce dip and sliced tomatoes and cucumber.
Tips:
- This is another perfect recipe to do away with the day old bread
