Glutinous Rice with Mango

Ever since I came back from California, I’ve been craving for the Glutinous Rice with Mango dessert that I ate at the Thai restaurant. This Thai dessert comprises of a basic ‘pulut’ recipe mixed with coconut milk accompanied by fresh mangoes. It was really delish with the rice cooked to perfection and mixed with the sweet coconut milk. It had a yummy subtle but rich flavour. The sweetness of the rice paired with the sweet-sour mango made the dessert an all time hit with my family. I suppose it has been at the back of my mind for sometime now and when I saw those ripe juicy mangoes, I just couldn’t help myself. I had to make this dessert for iftar (break fast).

Ingredients: (Serves 4)
3/4 cup uncooked glutinous rice - will yield about 2 1/2 cups cooked glutinous rice
1/2 cup coconut milk
1/4 cup sugar
a pinch of salt
1 ripe mango

Method:

  1. Prepare the glutinous rice.
  2. In a small saucepan, add coconut milk, sugar and salt.
  3. Stir under medium heat until sugar dissolves.Turn off the heat.
  4. Add the rice and stir to mix completely.
  5. Leave aside for 10 minutes.
  6. Serve warm with sliced mangoes.

    Your recipes are easy to follow and the instructions you provide are really lucid. Since being away from home (also in good ol’ SG) and away from my mom (who has always been the cook for my family), I’ve had to quickly pick up some culinary skills. I will definitely come back to your site every now and then to use your recipes, especially the Malay dishes that you have lined up here!
