Apple Fritters

I found a stray apple in the refrigerator yesterday. It was hidden all the way back in the drawer I keep fruits in and had a sad neglected look about it. It didn’t look too appetizing to eat it on its own even if the maxim ‘an apple a day keeps the doctor away’ rings true. But it would be rather wasteful to throw it away so I decided to remove the apple skin and see if beneath the skin, the apple was still good to consume. Surprisingly, it was. So I decided to make some apple fritters with that one lonely apple and feed four mouths for tea time.
Ingredients: (makes 20)
1 apple - cored and chopped (remove the skin - optional)
Oil for deep frying
Dry Ingredients:
1 cup flour
1/4 cup sugar
1 1/2 tsp baking powder
1 tsp salt
Wet Ingredients:
1 egg - lightly beaten
1/2 cup milk
Method:

Mix all the dry ingredients above with a whisk.

Add the wet ingredients. Mix to become a batter.

Add the apples and stir with a spoon. Mix well.

In a pot, pour enough oil for deep frying.

When the oil is hot, drop a tablespoonful of the batter into the oil.

When the sides turn light brown/yellow, turn the fritter over.

Cook the other side until golden brown. This should take about 3 minutes or so. Drain on paper towels.

You can make a few fritters at a time depending on the size of your pot.

Serve hot with tea or milk. Enjoy!
Tips:
- The oil should not be too hot or it will turn a dark brown colour very fast and the insides of the fritter will not be thoroughly cooked.
- Try one fritter first to get a feel of how long it takes to fry one before making a whole batch. This will prevent you from panicking!
- To know if the fritter is cooked properly, take one fritter and break it in half. If the middle (the thickest part of the fritter) is not cooked, you will still see the batter. Put it back in the oil and fry till the batter cooks. This should take another minute or two.
- To keep apples fresh in the fridge - keep the apples separated from each other. They will not keep well as long if they are touching each other.
