On weekends, in SIngapore, breakfast was a call to the fast food to get it delivered. That’ll come to about $20. I think it’s an exorbitant amount for a little convenience especially when you can make your own pancakes for way lesser than $2! Buying the instant pancake mix was a little less convenient and a little less expensive than get breakfast delivered but also tasted a little less satisfying as well. Then I tried the ready-made frozen pancakes or toaster pancake version. It was fast and easy. But it didn’t taste as good as the above options and I would say not very cheap either. But at least if you’ve slept in and was looking for an instant breakfast, it’ll be the best of all the choices above - no need to wait for the delivery, no need to mix the batter and not too exorbitant - but not the healthiest options for the kids (although as adults we think our bodies are wired differently!).

So I decided to go hunting for a pancake recipe that was fast, easy, cheap, healthy and yummy. I trawled the net in search of pancake recipes, making my family the guinea pigs (which I don’t think they minded too much!) and finally found the winner on youtube. The recipe below is taken from Angie’s recipe on youtube. When you’ve tried this for yourself, you’ll realise what a rip-off all the other ways to get pancakes on your table is.

Ingredients:

Set A - Mix all the dry ingredients with a whisk
1 1/3 cup all purpose flour
3 tbsp sugar
1 tbsp baking powder
1/2 tsp salt

Set B - Mix all the wet ingredients
1 egg, beaten
1 1/4 cup milk
3 tbsp vegetable oil
1/4 tsp vanilla

Method:

  1. Pour B into A and mix with a whisk so that the batter is well mixed. A few small lumps is acceptable. Overwhisking the batter will make the pancakes lose its softness.
  2. Put about 2tbsp of the batter on a non-stick pan and cook the pancake on medium heat.
  3. When you see bubbles appear on the surface of the pancake, flip it to cook the other side for another 1min.
  4. Serve hot with whipped butter, maple syrup, honey and fresh fruits.

    i cheat by using Pancake Parlour’s ready-mix (do u have it there?) juz add milk, let it stand for 10 minutes and cook, works all the time and taste better than Mc’s hotcakes (seriously!)

  2. Hi Farah! Don’t think I’ve come across that brand of pancake mix. But then again I only shop at Safeway and Fred Myers cos they’re nearby. :)

  3. Hey..have you tried eating pancake just by drizzling lemon juice on it? It’s our (as in Tom and I) tradition at home..since he’s saying too much sugar/syrup ain’t good for ya. But will try and add in vanilla next time we do our pancakes, thanks for that suggestion!

  4. What an interesting suggestion…Lemon! Maybe this weekend I’ll try pancakes with lemon and let you know. My younger kid eats the pancakes by itself. No syrup or butter…just like that with strawberries.
